Sizzling Summer Recipes from DINE country

With July 4th upon us, it’s time to fire up the grills and start thinking about sizzling summer suppers. And when it comes to DINEing, the 11 member inns of Distinctive Inns of New England have some great ideas for your summer soirees. Of course, if you’d rather leave the entertaining to us, all 11 DINE inns will welcome you  for your next summer escape.  In the meantime, if you can’t get to DINE country, try out a  few great ideas for your summer table from your friends at DINE.

Grilled Lime-Tequila Marinated Shrimp from Rabbit Hill Inn   

Preparation of the Marinade    Yield 1 ½ cups

¼ cup lime juice, fresh squeezed

½ Tbls garlic

2 Tbls shallots

6 Tbls olive oil

1 Tbls Dijon mustard

¾ tsp fresh black pepper

2 Tbls minced cilantro

4 Tbls minced parsley

 Method:

  • Combine all ingredients and incorporate well.

Preparation of the Shrimp:

2 lbs large shrimp

Method:

1. De-vain and shell shrimp.

2. Soak in the marinade for 2-3 hours (longer if possible).

3. Remove shrimp from marinade and let drain for 2-3 minutes.

4. Oil the hot grill rack to prevent sticking.

5. Grill on both sides until done (3-5 minutes total).

Gingered Pear Crisp from Captain’s House Inn

Yield: 6 servings-  (Serving size is about 1 cup)

¼ Cup golden raisins

¼ Cup Granulated Sugar

1 teaspoon grated orange rind

1 tablespoon  fresh orange juice

1 teaspoon chopped peeled fresh ginger

½ teaspoonVanilla extract

4 cups chopped peeled Bartlett pears (about 4 pears)

¼ Cup  All-purpose flour

½ Cup regular oats

¼ Cup  Packed Brown Sugar

¼ Teaspoon Ground Cinnamon

1/8 teaspoon salt

3 tablespoons chilled butter, cut into small pieces

2 tablespoons Chopped Pecans

Method:

  1. Preheat oven to 375F.
  1. Combine first 6 ingredients in a large bowl, stirring to combine. Add pears, toss gently to coat. Spoon pear mixture into a shallow 2-quart baking dish lightly coated with cooking spray.
  1. Lightly spoon flour into a dry measuring cup, level with a knife. Combine flour, oats, brown sugar, cinnamon and 1/8 teaspoon salt in a medium bowl. Cut in butter with a pastry blender or 2 knives until resembles coarse meal, and stir in nuts. Sprinkle flour mixture over pear mixture.
  1. Bake at 375F for 35 minutes or until topping is lightly browned. Cool on a wire rack for 10 minutes.
