Grand Marnier Chocolate Cobbler from Rabbit Hill Inn
Ingredients and preparation for chocolate base: Yields 6 servings
4 oz butter
6 oz semi sweet chocolate, chopped
2 eggs
2 TBSP sugar
1/4 cup Grand marnier
– Over double boiler, melt butter and add chocolate. Stir until melted
– Remove from heat
– In a separate bowl, mix eggs, sugar, and Grand Marnier
– Stir in chocolate mixture
– Pour into 6 greased ramekins. Chill to set (slightly firm)
Ingredients and preparation of the cobbler batter:
3 TBSP butter, melted
1/2 cup all purpose flour
1/2 cup sugar
2 TBSP cocoa
1/4 cup milk
1/4 cup boiling water
2 TBSP Grand Marnier
1/2 tsp baking powder
– Preheat oven to 325 degrees
– In large bowl, mix flour, sugar, cocoa, and baking powder
– Stir in milk, Grand Marnier, and butter
– Stir in boiling water and mix until incorporated
– Pour batter over the chilled chocolate base in each ramekin
– Bake at 325 until knife or tester comes out clean when inserted in the middle
– Place ramekin on serving plate (or turn cobbler upside down on plate)
– Serve with ice cream, chocolate sauce, and fresh raspberries.
