Recipe of the week: Eggs Florentine – easy and a crowd pleaser

Breakfast is an not only the most important meal of the day, but it’s also a highlight of any Distinctive Inns of New England (DINE) stay.  Escape to any of the nine DINE member inns and you’ll be treated to a fabulous breakfast served either fireside, by candlelight or bathed in the sunlight of a porch or sunroom.  For many guests accustomed to getting up and preparing breakfast for the whole family, sitting down to a beautifully prepared breakfast at a DINE member inn is pure pampering.

We often get requests to share recipes.  Here’s one from the Camden Maine Stay inn for a simple egg and spinach dish that’s easy to prepare and a real a crowd pleaser.  Knowing that many are on the lookout for reduced fat recipes, we’ve offered tips on substitutions which will lower the calories for this dish by nearly 50-percent.  Try it at your house and let us know what you think!

Eggs Florentine from Camden Maine Stay

1 pint creamed cottage cheese (use reduced fat or fat-free)

1 pkg. frozen chopped spinach

1 stick butter or margarine, melted and cooled (to reduce fat, use light butter or cut butter in half)

6 large eggs

8 oz. Swiss cheese (can use light Swiss cheese like Finlandia Light)

8 oz. Feta cheese (substitute light Feta for reduced calories)

dash of nutmeg

hot pepper sauce to taste

possible add-ins:  chopped ham or mushrooms

Instructions: 

Beat eggs.  Add cheeses, butter and mix well.  Cook and drain spinach well.  Add to cheese mixture.  Add nutmeg and hot pepper sauce.  Pour into a greased 9 x 13 baking dish and bake at 350’ for 40 minutes.  Cut into squares.

Serves 8 to 10.
