In honor of the Derby

While mint juleps might be the drink of the day during the Kentucky Derby,  this delicious pie will hold up as the “other” official dish of the Derby!  Coming to you from the Chesterfield Inn, be sure to add a piece of this to your Derby party this year.

CHESTERFIELD INN KENTUCKY DERBY PIE

¾ c      butter, melted and cooled

¾ c      sugar

3/8 c    brown sugar

3/4 c    flour

3 ea      eggs, beaten lightly

4 1/2T  bourbon

¾ t       salt

1 1/2t   vanilla extract

1 c       semi-sweet chocolate chips

1 c       walnuts, coarse chopped

1ea       8″pie shell, unbaked

Method

Preheat oven to 350F. In mixer, cream together butter and sugars. Add flour, then eggs, bourbon, salt and vanilla.

Spread the chocolate chips and nuts in the bottom of the pie shell.

Pour in the filling

Bake in preheated oven for 30 to 40 minutes, until it set.

Cool and serve w/ bourbon caramel sauce and vanilla ice cream in true Derby fashion.  Don’t forget the fancy hat too!
