Recipes for a Perfect Mother’s Day Breakfast in Bed

Breakfast in bedMom’s special day is coming up.  Doesn’t she deserve the best, starting with breakfast in bed! We’ve scoured the recipe files from the kitchens of Distinctive Inns of New England (DINE) and offer a variety of great ideas for Mom’s special day.  Of course, to make her really feel special, how about adding a gift certificate for a getaway to any of the ten DINE inns? From home baked starters to dessert for breakfast, here are a number of wonderful recipes to create the perfect way to start Mother’s Day – breakfast in bed!

Start her special meal off right with a steaming cup of her favorite coffee and a glass of fresh squeezed orange juice – such a treat!

Who doesn’t love to start breakfast out with donuts?  Allow Mom to splurge on these fabulous home baked donuts to start.

Baked Sugar Donuts from Harbor Light Inn

Ingredients

2 cups all-purpose flour

1 1/2 cups sugar

2 teaspoons baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon kosher salt

1 extra-large egg, lightly beaten

1 1/4 cups whole milk

2 tablespoons unsalted butter, melted

2 teaspoons pure vanilla extract

For the topping:

8 tablespoons (1 stick) unsalted butter

1/2 cup sugar

1/2 teaspoon ground cinnamon

Method

Preheat the oven to 350 degrees. Spray 2 doughnut pans well.

Into a large bowl, sift together the flour, sugar, baking powder, cinnamon, nutmeg, and salt.

In a small bowl, whisk together the egg, milk, melted butter, and vanilla.

Stir the wet mixture into the dry ingredients until just combined.

Spoon the batter into donut baking pans, filling each one a little more than three-quarters full. Bake for 17 minutes, until a toothpick comes out clean. Allow to cool for 5 minutes, then tap the doughnuts out onto a sheet pan.

For the topping, melt the 8 tablespoons of butter in an 8-inch sauté pan. Combine the sugar and cinnamon in a small bowl. Dip each doughnut first in the butter and then in the cinnamon sugar, either on one side or both sides.

Since we started with something sweet, let’s make the breakfast entrée a savory one, combining waffles with America’s favorite sandwich – the BLT!  Make a few extra waffles for the kids and serve theirs up with maple syrup.  Now everyone in the family will have a special breakfast!

Savory Cheddar Waffle BLT with Egg from Captain’s House Inn

Ingredients for waffles

waffles6 TBSP melted butter

4 Cups All-Purpose Flour

4 tsp baking powder

4 large eggs

4 cups milk

4 cups shredded cheddar

Other ingredients

Bacon – two slices per order

Arugula

Tomato Slices – one per order

Eggs – two per order

Method (waffles)

  1. Whisk flour and baking powder in a large bowl.  Set aside.
  2. Crack eggs into a second bowl and whisk.  Add milk and while whisking add butter.  Add cheese and stir until combined.
  3. Add milk-cheese mixture to the flour and stir with a rubber spatula until the flour is just incorporated.
  4. Heat classic waffle maker (square).  Fill with batter and cook.  Transfer waffles to rack and repeat.

Assemble

  1. Cook two eggs – over easy
  2. Put one waffle on plate
  3. Top waffle with tomato slice, arugula, cooked egg and bacon slices.
  4. Garnish as desired.

Top it all off with this fabulously easy and lemony dessert, the perfect way to end a perfect meal with just three ingredients.

Lemon Posset from Rabbit Hill Inn

This recipe calls for only 3 ingredients.  Yields four 5 oz servings and Mom will just love it!

Lemon Pousset - RHIIngredients

2 cups heavy cream

2/3 cups granulated sugar

5 Tablespoons lemon juice

Method
In a small saucepan, heat cream and sugar to boiling, stirring to dissolve sugar.  Continue boiling for 5 minutes. Watch the heat – don’t let the cream boil over.

Remove from heat and stir in lemon juice.  Let cool for about 15 minutes.

Pour even amounts into your serving bowls, ramekins, teacups, etc.  Refrigerate at least 2 hours to set (overnight is best).

Serve with unsweetened whipped cream, or shortbread cookies to dunk.  Garnish with any fruit or candied lemon zest.

Rabbit Hill Inn serves this dessert in a teacup topped with fresh blueberries, with cookies and jasmine whipped cream. However, you may dress it up any way you wish.
